5 fillets of fish (tilapia, catfish, etc)
1 small onion -chopped
2 medium tomatoes -chopped
1 handful of cilantro -chopped
3 cloves of garlic –chopped
1. Spray pan with PAM or drizzle with a little bit of olive oil
2. Layer fish at the bottom of the pan – sprinkle salt, pepper, & paprika
3. Add the chopped onion, tomatoes, cilantro, and garlic
4. Cover with lid and steam on low-medium heat for @ 20-30 minutes
5. Enjoy

I love this recipe. I use it almost weekly since I got it. It is not only healthy--use little oil and many veggies, but also very tasty. It takes about 30 minutes to cook and requires little attention. I recommend it to everyone who eats fish. I use frozen sole fish fillets that you can buy from almost every grocery store. It is almost white or very light pink and doesn't smell. Cilantro adds great flavor and cannot be substituted with green onion although they are both green. (Someone already tried it and you can imagine the result). Thanks Susana for putting it in the cookbook.
